It’s been a while since I shared what I’ve been eating lately. I never want these posts to be something you use to compare my eating habits to yours. Rather, I want you to see the diversity of meals that I eat as well as the simplicity — wellness bloggers with perfectly curated food are fun to look at, but that’s just not me 95% of the time. If I get some time to make a perfectly colorful and plated meal, I’m excited about it. But that’s just not reality most of the time.
Breakfast
More often than not, breakfast is an english muffin with some type of topping — whether it’s avocado and egg or cream cheese and salmon just depends on the day and what I have on hand. I usually throw in some berries or a banana at some point in the morning as well. Typically on Friday’s when I work remotely I grab a chocolate croissant at my favorite coffee shop. When I was at home I picked some blueberries and visited an Italian pastry shop. Point is: my breakfasts have some consistency but depending on my situation, they may change. That feels flexible and fun for me. PS I had a chik fil a breakfast biscuit for the first time and WOW.
Lunch
Lunch is not a favorite of mine. Even as an RD, I’m always like “uhhhh what should I make?” and feel too lazy to get overly creative. All I have to say is: hard-boiled eggs save my lunch game. They’re the simplest, guaranteed way I’ll get some protein. I usually add some chopped veggies, pita bread or some type of baked good (if I’ve made any that week). Last Friday I did try an acai bowl at this juice shop near my house, so that was different.
Dinner
Usually a mix of carbs, protein and fat, dinner is fairly easy for me to prep. Plus I go out to eat at least once during the weekend (and sometimes Fri/Sat/Sun LOL). Some combos have been:
beef bulgogi, corn and bell peppers & zucchini // steak, sweet potatoes and bell peppers // salmon, sweet potatoes, bell peppers & zucchini. I’ve also enjoyed pizza, a meat + cheese board (appetizer), honeygrow stir-fry dish, and ariake sushi.
Other
Things I left out include some ice cream & cookies, matcha tea and all the cappuccinos I’ve been making with my nespresso machine 🙂
