Hiya! It’s been a week or two since I last shared my food for the week, so I figured now would be a good time to catch you up. As a reminder, these posts are meant to inspire you to try new foods & be more inclusive of the foods you eat. We see our “best” images on Instagram, and these photos (while I admit I did try to make them look nice) show that not every meal is perfectly put together.
Each month I typically set a budget for how much I want to spend eating out. January I barely ate out at all — like maybe $10 for the whole month. It’s February 6th, and I’ve already spent over half my budget. So it is what it is. With that being said, you’ll see a couple more restaurant-type images. One of these days I’ll make some new recipes, but for now I’m enjoying spending a minimal amount of time prepping foods so I can spend more time doing other hobbies/activities.
Breakfast
Breakfast lately has been anything from bagels with cream cheese, plain pancakes (I made a week before & froze) with a protein bar, or yogurt/granola/banana. My ideal breakfast is eggs, toast, avocado and fruit but I don’t usually make that effort on a weekday. I did venture into DC with a small group from my church to try Brick Lane — I ordered a Caprese Benedict — the basil Hollandaise sauce, yo. I also revisited Bagel Cafe with Josh one morning. We both ordered the everything bagel with salmon cream cheese. I kind think they overdo it a bit with the cream cheese, but Josh loves it.
Lunch
Lunch is always a weird meal for me. I follow no dietary rules, so it can be anything from pasta with vegetables, a hard boiled egg, and fruit or chopped veggies to leftover pizza & a rice crispy treat. I usually find I’m most satisfied with a combination of macro-nutrients, so that’s pretty much the only idea I have when planning these meals. On the days I work from home, I usually go to Ridgetop Coffee and Tea, and one day I was there they had spinach & some cheese croissant. That was goooood. Oh, and leftovers speak to my soul.
Dinner
Last week I was not very creative with my meals (also a euphemism for lazy), so I had leftovers and even tried some Trader Joe’s pizza bagel bites. Please appreciate that I photographed them with flowers to add to the ambiance. I ate out a bit because I met up with some fellow Penn State alums and had family in town. Restaurants included Bartaco, Ciro, Baba, and A Taste of the World.
Overall, there’s a lot of uncertainty & variation in my meals, which is something that would have caused me a lot of anxiety in the past. Being flexible & gracious with yourself, your body and your food choices takes practice, but it’s definitely worth it.
