How To Make The Best Oatmeal Muffins

I shared my favorite oatmeal marshmallow chocolate chip cookies a little while ago, and now I’m sharing my favorite oatmeal muffin recipe [that marshmallows can easily be added to :-)]. Adding marshmallows were actually Josh’s idea. A few weekends ago, I was making these muffins and he decided to top half of them with chocolate chips and marshmallows while I did the other half with vanilla, brown sugar and cinnamon. This recipe is perfect to make on a Sunday afternoon before the work week begins. They’re perfect for an on-the-go breakfast or afternoon snack.

Recipe

Muffins

  • 1 C whole milk (or other milk of your choice)
  • 2 eggs
  • 1/2 C butter, unsalted (or oil, etc)
  • 1 C oats
  • 1/2 C brown sugar (I’ve also done white sugar when I didn’t have brown, could also use maple syrup)
  • 1 C flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon

Topping Options

Alyssa’s topping: Mix together 1 tbsp brown sugar, 1 tsp vanilla, 1 tsp cinnamon and put a small amount on top of muffins once in muffin tin.

Josh’s topping: Marshmallows and chocolate chips

Combine wet ingredients then add dry. Mix in Kitchenaid or by hand. Scoop into lined muffin tin. Add topping on each muffin top. Bake at 375 for 15-20 mins. Makes about 9-10 muffins. I recommend to double the recipe 🙂
