These cookies are one of my favorites. I’m always up for a good oatmeal chocolate chip cookie (re: oatmeal raisin is not allowed. must be chocolate chip). And since it’s December, I’m currently obsessed with all things Christmas and comfy (i.e. Hot cocoa with marshmallows), so naturally I thought let’s add marshmallows to these cookies! Of course, I’m not the first person to do this. But the lighting was good for a picture & I thought you might like to try this — so here we are.

These ingredients were used to make half the number of cookies as listed in the recipe.
Oatmeal Marshmallow Chocolate Chip Cookies
Ingredients:
1 C butter, room temperature
1 C brown sugar
1/2 C granulated sugar
2 eggs
1 tsp. vanilla
1.5 C flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 C oats
1.5 C dark chocolate chips
1 C mini marshmallows
Preheat oven to 350.
Line baking sheets with cooking spray or parchment paper.
In a stand mixer (or with a super strong forearm), beat the butter, brown sugar and granulated sugar together.
Add the eggs and vanilla and beat until combined.
Meanwhile, combine dry ingredients in a mixing bowl then add them to the sugar/butter/egg/vanilla mixture.
Add the oats and chocolate chips and mix until incorporated.
Chill dough at least 20 minutes.
Scoop onto prepared baking sheets and bake 8-10 minutes until golden brown. (FYI: watch these babies because mine were ready in like 6 mins).
In the last 2 minutes of baking, place mini marshmallows on top of each cookie.
Cool before eating.
Do a dance because you’ve made some delicious cookies.
